Meat Church started when Matt Pittman took a trip to Central Texas and had one life-changing bite of salt-and-pepper brisket. That was it, BBQ had him hooked. Matt grew up cooking with his Grandma June in Alabama, learning the value of simple, great-tasting food. But once the BBQ bug bit, he went all in. Backyard cookouts turned into full-blown competitions. His passion landed him a spot on the hit TV show BBQ Pitmasters, where he realized he could share his signature spice blends with the world. That’s how Meat Church Holy Cow, his first rub, was born. And let’s just say, folks ate it up.

Tell us a little about yourself, where are you from and how did you get into the BBQ industry?

I am a self-taught BBQ pitmaster and chef. One bite of a beef rib in Lockhart Texas sent me on a mission to learn everything I could possibly learn about outdoor cooking. I was enamored with the TV show BBQ Pitmasters and submitted a tryout video that went viral. Through the filming process I took seasonings that I made on the show and accidentally launched Meat Church. Through sharing my cooking with approachable instruction on social media, we have built one of the largest and most respected outdoor cooking brands in the world.

Why is Waxahachie where you decided to plant the Meat Church roots?

We moved to Waxahachie in 2006. My wife's family lived here so we visited often. We feel in love with it because it feels like a small country town centered around one of the most beautiful courthouses in Texas. I'm out of the big city, but close enough to get there if I need to. This town has embraced and supported our family business beyond my wildest dreams. Waxahachie and Meat Church have become synonymous. When folks travel and hear "Waxahachie" they almost always reply asking if that person knows Meat Church.

What is it about Pecos that makes you excited to work with our product?

I like stuff that lasts. Stuff that is over engineered. Stuff my kids can use when I pass it down to them. As I've gotten older, I've come to appreciate quality materials. Buy once, cry once. But have that tool forever.

Which product(s) do you like the most and how does it help you with your job?

I can't live or travel without a Pecos table. I take at least one wherever I go. It breaks down to be easy to carry. When I get where I am going, it's at a great height so I can prep or cook on it without breaking my back. I love that I can work directly on it without a cutting board if need be and then easily clean it. I can even stand on it to get stuff out of my storage systems or change light bulbs.
